Commissary (Central Kitchen) Team Member

Commissary Team Members are responsible for preparing quality fresh foods to be distributed to HOTLIPS restaurant locations daily. Commissary Team Members may be hired to serve in one or multiple roles. While Commissary Team Members may work the majority of their shifts in one role, employees will cross train and learn as many roles as possible. Commissary Team Members take direction from and report to Shift Supervisors in the absence of the Commissary Manager.

☐ Dishwasher Role - The individual acting in this role must consistently demonstrate their ability to fulfill these responsibilities:

  • Collect and wash in a timely manner used kitchenware from prep and kitchen areas.

  • Load and unload washing machine or wash specific items by hand.

  • Sort and remove trash, placing it in designated pickup areas. Clean garbage cans with water or steam as required.

  • Clean food preparation areas, facilities, or equipment as required.

  • Load or unload deliveries or pick up food or supplies by hand or using hand trucks.

  • Perform Commissary driveway and street sweeps to ensure neighborhood cleanliness.

☐ Prep Cook Role - The individual acting in this role must consistently demonstrate their ability to fulfill these responsibilities:

  • Work in a manner that complies with food safety and use kitchen safe practices, adhere to time & temperature control and ensure our high standard of product quality is upheld.

  • Be knowledgeable about our menu offerings, adhere to specifications of recipes and accurate weighing/portioning of items. Complete preparation of menu items to prescribed HOTLIPS standards understanding cost control measures.

  • Be willing to adapt to new processes, products and menus (as per seasonal, promotional or operational changes).

  • Proactively communicate prep kitchen needs. Demonstrate the ability to manage time effectively.

  • Make all efforts to minimize food waste.

  • Model kitchen cleanliness best practices and ensure deep cleaning project cycles are carried out.

  • Assist with meal preparation, such as lunches, research & development projects or special orders catering or special orders) as necessary.

☐ Dough Preparer Role - The individual acting in this role must consistently demonstrate their ability to fulfill these responsibilities:

  • Work in a manner that complies with food safety and use kitchen safe practices.

  • Mix, portion and package dough for baked goods (using dough mixer, divider etc) as per store/event order guides.

  • Demonstrate basic math computations in diving, weighing and sorting.

  • Monitor carefully recipes and machine operation, communicating any issues as early as possible.

  • Maintain sanitation, health, and safety standards in work areas.

☐ Supervisor Role - The individual acting in this role must consistently demonstrate their ability to fulfill these responsibilities:

  • Source food and equipment together with head office assistance.

  • Organize food transfers.

  • Lead research & development of menu items, develop and monitor food costs.

  • Work with vendors and supplies to ensure best produce and price points are being monitored across our menu.

  • Hold crew members accountable to fulfilling their job descriptions, organizing staff to work in a manner that ensures smooth operations and expeditious delivery of high-quality products.

  • Model desirable behavior; share best practices; provide leadership and guidance to crew members.

  • Be eager to expand knowledge through training and other HOTLIPS resources.

  • Seek out and refer to HOTLIPS training, policy and resources as part of decision-making processes.

  • As person in charge, be knowledgeable, prepared and equipped to handle initial stages of workplace incidents and emergencies (including injuries, auto incidents, mechanical failures, natural disasters etc.).

  • Ensure all shift staff are up to speed through effective communication.

  • Perform extra accountability checks as prescribed by Corporate Office and General Manager.

  • Record in detail and escalate important issues to next Shift Supervisor, Commissary Manager or Corporate Office (via Shiftnote, phone, email) as required.)

  • Manage shift labor; ensure staff breaks are taken, make and accurately document shift cuts. Communicate shifts unexpectedly rendered understaffed. Be ready and able to fulfill all positions to ensure a smooth shift.

  • Observe and facilitate maintenance checklists (e.g. Deep Cleaning Cycles)

  • Open and close Commissary ensuring all company property is safe and secure.
