The long-awaited arrival of asparagus—and loads of other spring greens

Because we stick to local produce wherever possible, and it’s spring, things are getting interesting. Gone is a winter of apples, potatoes, onions and other stuff that (thankfully) keeps for months while the ground is cold, muddy and bare (with the notable exception of hearty greens like kale). Spring produce is rolling in and spicing things up.

“We’re getting the tender, young greens like mâche, arugula and shinjuku,” says HOTLIPS chef Greene Lawson. “They’re adding spicy shapes and textures to our salads—surprise tastes of spring.”

Pretty soon there’ll be substantial stuff like asparagus from Outback Farms, where we’ve has been buying great produce for years. “And then before we know it, we’ll be making room for June’s summer squash and berries, and July’s tomatoes and chiles,” says Greene.
